    Default Duck fat fried potato report

    Cut the potatoes into strips. Fried them twice. Served them with
    Sriracha mayo. They were very good with the smoked pork chops at
    dinner.

    Potatoes cooked in any kind of poultry fat are excellent. Even if
    it's half chicken fat and half vegetable oil, it still works.

    Potatoes cooked in any kind of poultry fat are excellent. Even if
    it's half chicken fat and half vegetable oil, it still works.

    The duck fat I used was from a batch of duk confit I made at
    Christmas. It was just fine last night. How long after today, I
    can't say.

    I have some a year old. Just fine. Tightly closed jar in the fridge.
