Dinner was good, but the leftovers...
....were fantastic!
We had roast chicken for Easter dinner. Dear Husband was
evidently ravenous because he ate both legs, one thigh, and
half of the breast he had carved. I ate the other half.
Tonight for dinner I sauteed in a little butter:
~ 10 spears of leftover asparagus, cut into 1 inch pieces
a few thin slices of onion
about a half of a sweet red pepper, cut into matchsticks
a jar of pickled artichoke hearts, drained and chopped
a handful of black olives
sprinkle of salt and fresh ground pepper
I set those aside as I shredded the remaining chicken breast
and thigh, then boiled some linguini.
I heated the leftover gravy in the saute pan, added the
chicken, and when it was warm, the rest of the ingredients
plus about 1/4 cup of half and half (cream) for volume.
I drained the pasta and put it in a serving dish, poured the
chicken mixture over it and sprinkled with some freshly
grated Parmigiano Romano.
It was one of the tastiest leftover meals I've ever made.

Sounds really, really nice. I opted out of Easter this year, stayed home,
did not cook, and had anything I felt like grabbing. The best thing was
the simplest: angel hair pasta with too much fresh garlic smashed and
diced, a little butter, a good amount of fresh parmesan cheese.
Tonight was sirloin tips and soggy rice and broc with cheddar slivers.

You can come to Colorado any time. Bring Rob and we'll
introduce him to
a new company. Bring Young Child. Depending on the season
bring
galoshes or sun block and a parasol. It'll be much more
fun for me than
hosting random Swedes, and I'll cook leftovers for ya.
