    Good morning;

    I have had a request to make Chrusciki -- Polish Angel Wings Cookies today.
    I have never made them before so if you have a favorite recipe or some
    hints - help would be greatly appreciated.

    The proper way to make them is to cook them in lard. The ones Aunt Stephie
    made were fantastic. Never made them so we don't have a favorite recipe.

    This looks a pretty reasonable method close to what I have seen done:

    The only deficiency is that they mention vegetable oil for frying. Lard
    will give the best results.

    Have never made these either but other recipes from this book have
    turned out well!

    Chrust (from: 'The Art of Polish Cooking')

    2 eggs
    2 egg yolks
    1/4 tsp salt
    1/2 cup icing/confectioner's sugar
    2 cups plain/AP flour
    1/4 cup vodka (Polish of course LOL)
    1/4 cup soft butter
    lard, shortening or oil for frying
    2/3 cup icing/confectioner's sugar plus powdered vanilla or vanilla
    sugar

    Beat the eggs, egg yolks and salt together until creamy. Beat in the 1/2
    cup sugar. Add the flour, vodka and butter. Knead until well mixed.
    Roll out the dough on a floured surface until paper thin. Cut strips 1
    1/2 by 6 inches. Cut a slit in the middle of each strip and pass one end
    through the slit.
    Heat the fat on high heat (but not to the smoke point). Fry the strips
    on both sides until golden. Drain well. Dust (use a sieve) with the
    vanilla sugar.

    Martha Stewart made them with her mother and there is a video of them
    online. A friend has used this recipe and says they were terrific.

    Made a batch for a New Jersey native. He has not been able to find them out
    here.

    name....Martha Stewart is a North Jersey Pollack.

    BTW.....chrusciki should be paper thin and coated with powdered
    sugar.....they melt in your mouth.

    I am a Jersey Girl, too, living in way-the-heck-south Texas on the
    Mexican border. One doesn't find Polish delicacies here, either. <g>

    Thanks I learned that the thinness was important. The Powdered sugar is
    best applied from a sieve and tapping it. I will have to experiment with
    this a little. A final stretch on the dough just before dropping it in the
    hot oil helps with the texture. Anyway 2 things resulted. We made a Jersey
    boy happy, & I learned a new recipe.

    BTW I was happy to see Martha's mom also burnt a few. LOL

    Boy, they're good. Addicting. The ones I buy are made
    in north jersey, of course.

    Then you have done him a great service. I love those things. My kids
    used to call them "cruise ships" when they were young.

    I grew up in Detroit, which at that time had a very large emigrant
    Polish population, yet I have no memory of getting chrusciki growing
    up. Paczki, yes, but no chrusciki.

    LOL! I often say that about Catholicism - "you can take the 'girl' outta
    the Church, but you can't take the.Church outta the girl"

    I love the look of this recipe and will try it soon. A new neighbor of mine
    is from Poland, and I think I'll make them for her as a "welcome to the
    hood" gift.
