Chinese Style Corn and Chicken Soup
Thanks to JL and aem (I think) for inspiring me. Sorry, I'm not
replying in the thread... but I can't find it. I took both of your
recipes and made it tonight. It's soooo easy!
I happened to have everything on hand, including ham and dark sesame
oil - which were not necessary at all. I think green onion tops would
have made a nice garnish, but I didn't have any on hand, so I used
cilantro instead.
I needed to poach a chicken breast first. Other than that, it was
fast to make. Here's what I did.
Chinese Style Corn and Chicken Soup
by sf
6 servings
1 chicken breast poached and shredded or ½ to 1 C shredded chicken
4 C chicken broth
1 can creamed corn
1/2 - 1 C whole kernel corn (fresh or frozen - I used frozen)
3T cornstarch
3T water
1 whole egg, beaten
¼ t salt (optional)
pepper
green onion tops sliced into rounds
Bring broth up to a simmer. Stir together the cornstarch and water,
add it to the broth. Stir. It will thicken quickly. Add the beaten
egg in a thin stream, to make fine strands of egg (I stirred the broth
in one direction with a flat whisk). Add the salt, creamed corn,
whole kernel corn and cooked chicken to the mixture.
Stir well and bring soup up to serving temperature.
Ladle into bowls. Grind some pepper in the middle and garnish with
green onion tops.

Sometimes I even put it in the food.

I'd use snow peas, I think.

When you "do THAT", you could always pea in the pot.
