Thread: Chicken and white bean soup

    Default Chicken and white bean soup

    I made this for dinner tonight because I was tired of pumpkin soup and
    desperate for something that at least tasted like MEAT but I still
    can't chew.

    - 1 can white beans
    - 1 cooked chicken thigh (it would have been better with two, but I
    didn't want it to be too hard for me to eat...)
    - 1 large tomato, chopped into tiny pieces
    - 1 medium potato, peeled and chopped
    - 4 carrots, ditto
    - 1 small onion, finely minced
    - 3 mushrooms ditto
    - fresh thyme and garlic.

    The onion and mushrooms went into a saute pan with the garlic and were
    sauteed gently until they were soft... everything else went into a
    saucepan with some plain water to simmer into softness. When the soup
    was done I mixed in the onion/mushroom and pureed it. John thought it
    was a little bland (he's a salt-fiend) but I thought it was just
    right. You don't need to puree it (it looked great when it was all
    cooked!), but I can't chew so mush it was...

    You poor dear! When on earth are you going to get some relief and be able
    to eat more normally?
