Thread: Chicken Ensalada

    Default Chicken Ensalada

    There was a wonderful place that is now closed called Papalino's in
    Valencia. :-( they has a salad called a chicken ensalada, the main
    ingredients were greens, candied walnuts and of course chicken. What made
    the salad unique was the chicken. I am not sure just how they prepared the
    chicken but I suspect the chicken was poached, sliced and then the strips
    were put onto a grill until the boneless skinless, breasts formed a crisp
    layer. So precooked and then crisped. I am going to try to re-create the
    chicken.

    Ideas?

    Hints?

    Have you tried or had something similar?

    Find out who owned/ran Papalino's and see if you can track them down.
    Chances are, they're in the restaurant business.

    The businesses next door to Papalino's likely know who the primary targets are.

    Not I, but the idea of poaching, grilling and slicing doesn't sound
    much like the kind of thing most Mexican restaurants do. I'm wondering
    if they don't strip the skin, butterfly and grill the bird, mopping it
    regularly with the usual suspects. That seems to be how most bird is
    handled around here (Santa Ana) Then they can slice it for salads or
    any other dish.

    I'm just guessing.

    For a couple times I kept reading that as Chicken Ensenada.

    Been there - don't remember that dish - BTW Papalino's was an Italian
    Deli/Restaurant - Great Pizza, Pasta, & Subs.

    Dimitri,

    The name sounded Mexican/Spanish. I've never tasted the dish.
