    Deep Dish pizza is about as common there as it is in San
    Francisco. Chicago eats mostly thin crust pizzas, just like in
    New York.

    Yup. Our reputation is stuck in the 70's. I still make and enjoy
    deep dish pizza but I'm far from a purist. There was an article in
    Chicago mag a few years ago about pizza and Lou Malnoti's claims only
    like 30% sales are deep dish. Considering DD was their claim to fame
    that's pretty low. There's thin crust places popping up all the time.
    The old DD staples are still around but they've had to come up with
    thin crust alternatives to compete. I'm hit-n-miss on making thin
    crust but have settled on the lazy method of a 12 inch pita for the
    crust. I turn the oven on 550 and throw two pizzas together. 20-25
    minutes from the time the oven goes on I've got 2 nice crispy crust
    pizzas for about a buck each.
