    Thank you for posting! I was just looking at a tart tatin recipe the
    other day and it's on my to do list. At the moment, I'm trying to
    decide between
    Walnut and Ricotta Cake

    Are you still in Rome or have you moved? If you're back in the

    No, I Am still in Rome (near Rome, in Rocca di Papa) and it's very cold here...0-1░C during the night. And today it's raining
    My friends told me we had snow in the mountains near Turin!

    I've found the first recipe here: http://www.alansilverwood.co.uk/id43.html
    to be the most reliable. Turn the apples about half-way through the cooking
    so that they get evenly cooked (that's a tip from Anne Willan).
    Make sure you have twice the weight of sugar to butter. One recipe I
    followed had it the other way round and was a complete failure.
