    Default A busy cooking night

    I bought five pounds of nice lean ground beef at BJs yesterday, so
    tonight I processed it. I made some hamburgers for DH, a pot of
    lasagna sauce with vegetables in it (I had to use up the leftover
    veggies from the potluck lunch!), a tray of oven-baked meatballs, and
    I froze the last couple of pounds for future use.

    Then I decided that I really wanted to do some holiday baking, so I
    made the pumpkin bread from Epicurious. It's a big batch and I made a
    dozen muffins, two cute little mini-loaves, and a full-sized loaf.
    Then the muffins and mini-loaves went into the freezer to eat later.
    Mmmm that stuff is good!

    My version has twice as much spice, a teaspoon of ginger, raisins and
    craisins instead of nuts (we didn't have any) only two cups of sugar
    instead of three (and it's plenty sweet!) and 1/2 cup applesauce to
    cut down on the oil. So I've tweaked the recipe plenty, but DH said it
    was very good.

    You did better than I do. :-) I just freeze it in 8 oz. (1 cup) patties
    and save it for future use!

    It seems most recipes were sponsored by the use a lot more sugar
    institute. Shortbreads are one of the few things I bake and they turn
    out really well with considerably less sugar than noted.

    Mini-loaves are just the right size, and I like your idea of using
    craisins.


    Right now I am steaming 2 dozen tamales, so that takes a couple of
    hours. Tonight is Mexican night at my house. We are having pork
    tamales, chicken enchiladas, Spanish rice, refried beans, chili con
    queso & chips. Our first two house guests will arrive around 5:00. I
    am not ready, but after we have alittle little Puerto Rican eggnog, who
    cares?
