This morning the unit was varying between 130, where it turned on'
132, where it turned off, and overshooting to 135 before dropping back
to 130 again.

I'll post details later, but it cost under $100, not including the
roaster. Next week they've got the same type of roaster for $29,99,
w/ a $10 rebate, so I'm picking up a second, and I'll devote the old
one excusively to sous vide, custards and any other low temp water
bath uses.

Wiring the Love temp controller was pretty easy and straightforward:

Bryan bought the TCS-4010 (110VAC power input, degrees in F, for J/K
thermocouples) and a J-type thermocouple. The TCS-4010 has a 2
terminal power input, 3 terminal SPDT switch (the controlled output)
and a 2 terminal thermocouple input. (And who would have thought the
WHITE wire on the thermocouple was the positive lead? WTF??!! I
thought it was the red lead, not NOOOOO!). Wire the controller to have
110VAC power all the time, and a thermocouple input, then wire 110VAC
through the controller SPDT switch to turn the roaster on or off,
depending on the temperature sensed by the thermocouple.
I'd draw and post a schematic if I had a Mac with good graphics/
drawing capabilities, but I'm on a stinking PC with fantastically
rudimentary graphics capabilities (and my scanner is broken, else I'd
free-hand draw it and scan it in.)

Or maybe by employing a circulator for the water bath. That's a pretty
big roaster, capacity-wise.
Also, as I was reading the codes for the Love controller online,
there's evidently a setting to set it to 'heat' or 'cool'. Along with
the mysterious "hysteresis" setting. And all the other codes we could
not get to. :-( Maybe email the controller company and describe
exactly what's not happening as gfar as setting those codes, and
asking for help. Or there's the phone# too.

You can spare us all that. We already know that PC's have no
graphics capabilities whatsoever. If it wasn't for MacPaint,
nobody would be buying Macs.
