Made more enchilada sauce this morning for chilaquiles, one of my
favorite brunch foods. This time I made a double batch so I'd have
Layered tortillas with sauce, onions and cheese. I had some leftover
carmelized onions from last night and I used them. I prefer chopped
raw and won't use carmelized again, too sweet for the dish.
