I'm almost positive you already knew where the Monterey part came from
and http://itscheese.com/cheeses/montereyjack says this how the Jack
part of it came about. "A businessman in the 1800's named David Jack
started to market the cheese, calling it Jack's cheese."

Indeed. Many people I know that love espresso, but when having it from a
vending machine they always get the macchiato version, with milk
(powdered or condensed?), to kill the bad taste
