Arrrrrugh!
Okay, innocently half listening Ina Garten doing an "Ask Ina"... she's
talking about roasting chicken on a bed of vegetables. I'd not paid
attention to the intro with her reading a letter, but I'm thinking I
can back it up later if I need to. She says to put everything into a
roasting pan that (I don't remember her exact words, but she's saying
to use one that's not too big - yeah, like I have several roasting
pans in different "sizes") and then says "because"... now I'm
interested, so I hit the volume up button on the remote but I hit the
channel +/- button instead, so I lost everything and can't back it up
to review now. Grrrrr! I HATE that remote - whoever designed it must
have been left handed because the buttons are reversed for my right
handed purposes.

Yep, I saw that same episode today and she did say a smaller pan will
keep the vegetables from burning.

Pour enough water or stock over the bed of veggies to keep them from
burning. Replenish as needed and reserve, after bird is done, for
sauce or gravy making.

My remotes too... there's no industry standard... I really don't care
which side so long as they are all the same.

But what is the point of roasting vegetables if you don't get some of
that? That browning adds a huge amount of flavor. I roast chicken and
root vegetables frequently and use a large enough pan to make sure the
vegetables actually roast. If not I think it is a lot like wrapping a
potato in foil and calling it a baked potato.

I used to sit the bird on top of the bed of veggies and pour a bit of
water in to just cover the veggies. Now a days i prefer to roast the
chicken on a rack above the veggies. Makes it easier to baste and the
chicken (with turnings) gets evenly done all over. If one sits the bird
directly on the veggies the bottom of the bird gets braised. I think
this is more an aesthetic preference on my part than anything else.
