Acckk!!!!!! I forgot to get my beans started!!
Acckk!!!!!!!!!!!!!!!!
I totally spaced on starting my cranberry beans soaking last night. I
know that it isn't absolutely necessary, but I usually do it.
Okay..what is the method to quick soak/cook them? I never use it, so
I forget what it is.
I want these for the minestrone....

To 1/2 lb dry beans add 3 to 4 cups hot water. Boil 2 minutes,
then set aside for 1 hour.

Wash them and bring them to a boil. Put the lid on, remove them from the
heat and let them sit for one hour.

Cover the beans well with water. Bring to a boil then take it off the heat.
Let sit covered for 1 hour. Drain, rinse, proceed with cooking.

Cover beans with water, bring to rolling boil. Take off heat. Let it set,
covered, for 2-3 hours.

How much soup are you cooking... unless you're gonna cook like a 12-16
quart potful of minestrone a pound of dried beans is overkill.
I wouldn't cook dried beans for soup unless it's a bean soup... for
the small proportion of beans in minestrone canned beans are the way
to go... one 1lb can is plenty for 6qts of minestrone. Save your nice
cranberry beans for a bean dish.
