I wonder if Andy will ever come out with some TFW (tinfoil wear)? I
have quite a collection of TFHs, and it'd be nice to have something to

ObFood: Nick Stellino's Pasta Arrabiata
Ingredients
4 TBS. olive oil
4 garlic cloves, sliced
1/4 ts red pepper flakes
1 1/2 cup tomato sauce
1 cup chicken stock
1/4 tsp. salt
3 TBS. chopped fresh parsley
1 lb cooked penne pasta
Instructions
Directions: In a large sauté, pan, heat
the olive oil on medium heat. Cook the
garlic cloves and red pepper flakes until
the garlic begins to sizzle, approximately
2 minutes. Do not burn the garlic; it'll
add a bitterness that ruins the dish. Add
the tomato sauce, chicken stock, salt.
Toss in the penne pasta and parsley. Serve
immediately.

Do you have one of those aluminium grease pots with the fitted
strainer under the lid? (I can't remember what they're called, but
they used to be widely available in KMart and other places in the US.)

I'm a bits saver and it looks as if the majority are as well. I think it
all depends on what you use it for. I want the bits in most things I use
bacon grease for. It's gooooooddddd...

You're not kidding!!!!!! Saved bacon fat is smeared on top of most meats we
brown and braise. You slather it on the cut ends of standing rib roast, and
on top of steaks. We couldn't imagine being without it.

I don't get it.
Fry strips of bacon. Remove bacon from pan. Yes, a few minute
fragments of
bacon remain in the pan. Not very much, really.
Then I decant the grease into a jar and refrigerate it. At some later
date,
if I want to fry some onions in the bacon grease, I remove a spoonful
and do it.
Do you save your bacon grease after you've cooked something else in
it?
Oh, and the survey didn't say "I sometimes save bacon grease and I
sometimes
throw it away", which is what I actually do.
Not that I eat bacon OR fry things in bacon grease very often, anyway.

You know, Cindy, I answered that I don't strain the grease.
I just pour the stuff into a container and stick it into the
refrigerator. There are no bits. It's all white. ish. No
sludge. I guess I stop pouring when the grease is mostly
out and before the fried stuff starts pouring off.

how long can you reasonably expect it to keep? or do you grease
keepers use it up rapidly?
i don't cook it too much (too damned expensive), i have a small dish,
covered, in the refrigerator.
