Spinach-Stuffed Chicken Breasts

4 boneless, skinless 6 oz. chicken breasts

1 box of store-bought stuffing mix

4 egg whites

1 oz. pine nuts

½ cup spinach (fresh or frozen),
finely chopped

1 can of low-fat cream of chicken soup

1 can of water (use soup can)

1 green onion, chopped
Preparation:
Total Calories: 409
Protein: 62 g (248 cal)
Carbs: 20 g (80 cal)
Fat: 9 g (81 cal)
Instructions:
1. Preheat oven to 350° F.
2. Wash chicken breasts under cold water.
3. Prepare stuffing according to directions on box and add egg whites, pine nuts, and spinach.
4. Place chicken breasts on clean countertop or board. Place 1 tbsp. of stuffing on top of chicken. Roll breast up and place in square baking dish.
5. Mix soup with water and pour over chicken. Sprinkle with green onions.
6. Bake in oven for 25 to 30 minutes.
