Souvlaki (Grilled Garlic-Herb Lamb Kabobs)

This grill recipe is fabulous served over steamed rice!
Other: Ingredients:
Time:
Overnight
Difficulty:
Easy
Serving Size:
feeds 4 hungry guys
2 pounds of lamb (boneless leg), cut into 1 inch cubes
1 tablespoon garlic, minced
2 teaspoons oregano
2 teaspoons rosemary
1/4 cup olive oil
1/4 cup lemon juice
3/4 cup dry red wine
Preparation:
Place all ingredients in a large, heavy plastic freezer
bag. Close tightly and shake until well mixed. Place in the refrigerator overnight.
Instructions:
Pre-heat the grill.
Remove lamb from the bag (save the marinade for basting). Place on skewers and add vegetables like small onions, mushrooms, cherry tomatoes and chunks of bell pepper, if desired. (If using bamboo skewers, make sure to soak in water first). Place the lamb kabobs on the grill on medium low, slowly cook for 12-15 minutes, turning and basting often.
