Bourbon-Caramel Truffles (Don't freak- 60 calories each)
3 tbsp brown sugar
2 tbsp evaporated whole milk
1 tbsp golden cane syrup
dash of salt
1 tbsp bourbon
1/2 tsp vanilla extract
3.5 oz bittersweet chocolate- finely chopped
1.75 oz milk chocolate- finely chopped
2 tbsp unsweetened cocoa
Combine brown sugar, milk, cane syrup and salt in a sauce pan over med-high heat; bring to a boil. Cook 1 minute or until the sugar dissolves. Remove from heat. Stir in bourbon and vanilla extract. Add chocolates; let stand 1 minute. Stir until smooth. Pour into a shallow dish; cover and chill 4 hours. Heat a tablespoon with hot water and pat it dry. Scoop the chocolate mixture with a spoon and dip it in cocoa. Roll into balls. Cover and refrigerate until ready to serve. yield 19-20 truffles
Serving Size 1 truffle.
Home made Peanut butter cups:
1C creamy PB, divided
4 1/2 tsp butter, softened
1/2C confectioners sugar
1/2 tsp salt
2C semi-sweet chocolate chips
4 milk chocolate candy bars 1.55 oz each, coarsely chopped
In a small bowl: combine 1/2C pb, butter, sugar and salt until smooth- set aside
In a small microwavable bowl: melt the chocolate chips and candy bits and remaining PB, stir until smooth.
Drop teaspoonfuls of chocolate mixture into paper lined mini-muffin cups. top each with PB mixture then top with another tsp of chocolate mixture. refrigerate until set.
Yield 3 dozen
