    Post Would like an original Italiana recipies? Ask me!

    Hi all!
    I am an italian girl and I love to cook! So if you want some original and "really" italian recipies, you should just to ask!!
    But you need to follow "exactly" what I write!!!!

    So, have a nice "cooking time"!!!

    To start a simple simple simple and BASE recipe:

    Spaghetti al sugo (tomato suice) :
    Ingredients (for 4) :
    300 grams Spaghetti Barilla (Number 5)
    500 grams Tomatoes
    1/2 onion
    1/2 cup oil "extra vergine" of olive
    basil and salt
    NONE garlic (NO NO NO )
    note: Remember that 100 Grams = 0.22 Pounds


    1) Fill a large stockpot with water. Bring the water to a rolling boil.
    Wash the tomatoes and put in the pot. After 5 minute (the water shouldn't stop boiling), drain the tomatoes into a colander or (better) in a container with ice! And then peel them. Mash them with a masher :-).

    NOTE: if you haven't time, you can buy a tomatoes souse but CHECK that is ONLY tomatoes (without garlic, or onion, or others), normally there are also in usa something named "passata di pomodoro". IF you are not sure about the ingredients of what you are buying, Do Not buy it!

    2) Heat the oil on a gentle flame or low-med burner and add the onion in very small pieces! Wait 5 minute mixing sometimes with a wooden spoon. Then add the Tomatoes mashered, the basil and the salt. Cover the pot with a lid and reduce the heat. Wait 10-15 minutes, mixing sometimes.

    3) In the meantime, Fill a large stockpot with water and bring the water to a rolling boil. After the boil, Add Salt (about 1 teaspoon per gallon of water). Add the pasta to the boiling water and wait 5 Minutes. After 5 min. drain the pasta into a colander.
    Then (rapidly) put the pasta in the pot with the sause and cook for 2 minute.

    Check always the cooking time on the pasta packing. Normally it is written "8 min" for spaghetti n5. So you should cook the pasta for 7-2=5 in the water and then 2 in the sause.
    example: if the pasta (as the pennette) need 12 min, you should cook 9 min. in water and 2 in sause. Always the last one minute do not cook the pasta!

    4) eat the pasta without waiting other minutes! Because the pasta become overcooked in a short time.
