the way to make poaching chicken?
As fond as one may be of bacon and butter, sometimes the body just wants something light. What do you make when you want a light meal? Someone recommended poaching chicken to me,and told me the way to make it generally, but i forgot the info totally, anyone here knows?

People donít think of poaching poultry often enough. When I first heard of it in a book by Jeff Smith I was skeptical but it is very easy and works well consistently. I have made it many times.
Take an 8 quart pot filled 2/3rds full of water and bring to a boil. When the water boils, place a cleaned chicken (2 Ĺ to 3 lbs.) in the water. It will stop boiling, remove the chicken. Cover the pot and wait for the water to again come to a boil. When it is boiling again put the chicken back into the pot and cover the pot. Turn off the heat but keep the pot on the burner for 1 hour. At that point the chicken is done and is very easy to debone and serve.
