This seems like a non-traditional recipe for the Greek meze (appetizer) Saganaki. That is fried cheese. Usually made with kefalotyri, kefalograviera, kasseri, or halloumi cheeses. The varieties are a harder cheese than feta and will soften when fried instead of melting. I do like the honey/balsamic vinegar dressing and will be giving that a try next time I make me some saganaki rather than the usual drizzled lemon juice and olive oil.
