infused olive oil left out? Food safety question
I consume a great deal of olive oil, to which I like to add fresh basil, onion, garlic, etc...and heat to 300 degrees for a couple hours. It's sort of ultra-infused because the oils really come out and the whole thing becomes like a delicious mush. Once it cools I put it in tupperware, cover it and leave it on the counter until it's gone, which is usually a day, sometimes two.
Last night, however, I forgot to take the pan out of the oven. The oven was turned off so the mush has now sat uncovered at room temp for more than 12 hours.
In general, how should I be storing/consuming this concoction? Eat it warm out of the oven and then into the refrigerator? Is there any danger to leaving it out and uncovered? Maybe I can just reheat to 200 degrees before eating?
