I love sushi also! Eel is one of my favorites!
I bought a small Edge-Star counter-top freezer that holds at -25 to store and de-parasite my own sushi fish in. It works wonderfully. It holds about 5 pounds of fish and at one ounce per/piece, that's a LOT of sushi. I live one mile from the ocean, and a fish named "Southern Kingfish" or locally as "Whiting" can be caught all year in the surf. Each fish has about 8 ounces of white, mild flavored meat that works perfectly as sushi. I catch it, clean it and freeze it for ten days in my sushi freezer. It's fantastic to eat in many, many variations.
That's what I love about sushi. There are about 2 thousand ways to make sushi with or without meat and if there is meat, it can be either cooked or raw. I have yet to meet anyone who cannot be satisfied with a meal of sushi that has been made in accordance with their personal likes/dislikes and tastes.
