Brunch Blueberry Muffins
Hey,folks.
This is wonderful:
Preheat oven 400
Add melted butter to medium sized bowl
Pour in buttermilk - add 1 Tbls lemon juice to 1 cup of milk)
Add eggs
Add vanilla extract
Whisk to combine
Set aside
In a large bowl , add cake flour,then baking powder and some salt and then some pinchs of cinnamon
Add the sugars and whisk to combine
Add wet mixture to dry mixture
Fold gently using a spatula to combine
Stir until the flour is incorporated
Add fresh blueberries
Fold them in gently
Line muffin pan with liners
Spoon the batter into the liners
In a bowl ,add softened butter then brown sugar and stir
Stir in flour and then a pinch of cinnamon
Sprinkle crump topping on top of muffins
Then to the oven (bake for 15-18 minutes)
Let muffins cool in pan for 5 minutes
Place them on a cooling rack
Almond Glaze:
Add some melted butter in a bowl and stir in powdered sugar
Stir in milk
Pipe glaze onto cooled muffins

2 eggs,1 spoonful vanilla extract........and........ invite you to WATCH THE TUTORIAL ,chelle ... it's a better way.
