1 Pie shell, 10", deep-dish
1 cup Flour
1/2 cup Brown sugar
3 Tablespoons butter, softened
3/4 cup Molasses
1 cup Brown sugar
1 Egg
1 cup Boiling water
1 1/2 teaspoons Baking soda
Preparation:
Pre-heat the oven to 350F.
Instructions:
Mix together the flour, 1/2-cup brown sugar, and butter until a coarse meal forms. Set aside. Beat the egg in a separate bowl. Add the 1 cup of brown sugar and molasses. Place the baking soda in a separate bowl and whisk in the boiling water. Slowly whisk into the egg/molasses mixture. Pour into the pie shell. Top with the coarse meal and bake for 40-45 minutes (or until set). Allow to cool before serving.
