Can anyone recommend a good chef's knife? Something that's well balanced and cuts well

J.A. HENCKELS is a good brand, watch though, they have a lower quality budget line that does not hold an edge as well.

I like the Classic Wusthoff wide blade series. I have knives by Henkels, Global, Chicago Cutlery and a few others.

Henkels is crap. your safest bet is a good wustoff, you'll pay for it but it will last you forever if you take care of it.
