Pear Lime Preserves
Grate peeled pears off cores until you have about 8 cups.
Place into heavy boiler
Add the juice and zest of 1 large lime
Add: 1 t salt
4 cups sugar
Cook over medium high heat until it boils then reduce heat to medium and cook
at low boil; stirring often for about 20-25 minutes (until pears are cooked and have a honey color)
Pour into hot sterilized pint jars (fill to about 1/4 inch from top)
Place sterilized lids on and hand tighten. Place in a draft free area until cool and sealed.
Enjoy with hot biscuits or as a side with eggs and bacon, etc.
