Banana Stuffed French Toast

cooking spray

2 eggs

1/2 cup milk

1/2 teaspoon vanilla extract

1/8 teaspoon cinnamon

4 bread, sourdough, 1-inch thick slices

2/3 cup bananas, thinly sliced

powdered sugar or syrup
Instructions:
1. Preheat oven to 500°F. Line a baking sheet with foil; lightly coat foil with nonstick cooking spray. In a shallow bowl, combine eggs, milk, vanilla, and cinnamon. Beat with a wire whisk or rotary beater until well mixed. Set aside.

2. Using a knife, cut a pocket in each bread slice, cutting horizontally from the top crust almost to, but not through, the bottom crust. Fill bread pockets with banana.

3. Dip bread slices into egg mixture, coating both sides of each slice. Place on the prepared baking sheet. Bake for 10 to 12 minutes or until golden, turning once. If desired, sprinkle with powdered sugar or serve with syrup.

hmm looks nice, french toast and banana. I like banana, which I can cook for tomorrow...

What a wonderful idea! This is a good way to sneak in potassium to my kids' diets hehe. Thanks so much for the recipe, i'll try this over the weekend.

I am taking note on this one. I want to make on of this first thing today. Banana was one of my favorite fruits due to its nutritious fact.

Default Nice- another recipe 4 U

Cinnamon Pumpkin Waffles
Ingredients

* 1 cup whole wheat flour
* 1/4 cup wheat germ
* 1/3 cup white sugar
* 1 teaspoon ground cinnamon
* 1 teaspoon pumpkin pie spice
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon salt
* 1 tablespoon baking powder
*
* 3/4 cup milk
* 1/2 cup pumpkin puree
* 2 tablespoons melted butter
* 2 tablespoons olive oil
* 1/2 cup unsweetened applesauce
* 1 egg
* 1 egg white
* 1/2 cup chopped pecans

Directions

1. Preheat a waffle iron according to manufacturer's instructions. Combine flour, wheat germ, sugar, cinnamon, pumpkin pie spice, nutmeg, salt, and baking powder in a bowl. Set aside.
2. Beat together milk, pumpkin puree, butter, oil, applesauce, whole egg, and egg white. Stir flour mixture into the pumpkin mixture along with the pecans.
3. Ladle the batter onto the preheated waffle iron. Cook the waffles until golden and crisp, 5 to 7 minutes.

I made a similar Banana glazed french toast the use rum in the banana glaze. It was good but I didnt like the texture of the cooked bananas. I think if I made it again I would make the glaze and then strain out the banana peices. The glaze was 1/2 cup maple syrup, 1/2 cup dark corn syrup, 1/2 cup brown sugar, butter (dont remember how much but it wasnt a lot), 1/4 cup of Capt. Morgan Spiced Rum and 2 bananas sliced into peices. Combine and bring to a boil then let simmer for about 10 min. Serve warm over french toast.
