1/3 cup sun dried tomatoes, without oil, chopped (about 12 tomatoes)
1/4 cup olive oil
2 tablespoon rosemary, fresh, chopped
1 tablespoon basil, fresh, chopped
2 teaspoon lemon peel, grated
1/2 teaspoon pepper, red, crushed
1/2 teaspoon pepper
3 clove garlic, minced
8 oz goat cheese, soft, cut into 16 slices
16 slices bread, Italian, diagonally cut (1/4-inch-thick) or French bread baguette
Instructions:
1. Combine tomatoes and oil in a small bowl; let stand 10 minutes. Add rosemary and next 5 ingredients; stir well.
2. Place cheese slices in an 8-inch square baking dish; pour marinade over cheese. Cover and marinate at least 4 hours. Serve with baguette slices.
