prep 25 min- chill 2 hours

15oz can pinto or kidney beans, drained

1/4 cup salsa

4 1/2 oz can green chilies, drained

4 oz roasted red peppers, drained and chopped

1 cup low-fat cottage cheese

1 cup chopped tomatoes

1/4 cup sliced green onions

1/4 cup low fat shredded cheddar cheese
Instructions:
in a food precessor blend beans and salsa until smooth. spread mixture evenly in a shallow 9 inch pie plate. top with chili peppers and roasted red peppers. place cottage cheese in food processor and blend until smooth. spread ontop of pepper. cover and refrigerate 2 hours. to serve sprinkle with tomatoes, green onions and cheddar cheese.
