Thread: White chicken chili

    Default White chicken chili

    I've never had this. Don't think I would like it because of the chicken but
    I do like chili. Angela OTOH doesn't like chili but does like chicken.
    Then again she has never had the white chicken chili. But all of the
    recipes I see for it call for white beans. Has anyone tried making it with
    no beans? Or more chicken and half the amount of beans?

    I suggested to her that she try canned chili that was all meat but since it
    was beef she wasn't interested. My MIL made chili that way and I thought it
    was good but I prefer mine to have beans.

    How about cooking and serving the beans and rest of it separately
    so that the two of you can have different proportions of the
    beans?

    I won't be eating the chili. And I don't see how that would work with
    something like chili anyway because you'd want the beans to be seasoned.

    Do you mean that the chili is made with white meat chicken, or is the chili
    literally "white," as in no tomatoes and no red chili papper? That's hard to
    imagine.

    These days I make turkey chili using ground turkey quite frequently. I
    usually use either pink or black beans, although I used pigeon peas the
    other day, and they were fine. I make my own chili powder from a variety of
    dried chilis and other spices.

    I believe it is literally white. No tomatoes. Recipes vary but there
    always seems to be cumin.

    I don't like ground turkey at all. Not sure Angela could eat pigeon peas
    because of her pea allergy. Are they a true pea? Or do they just call them
    that?

    I think (but am not sure) it is mainly the beans she objects to in chili.
    But I got some bean soup imported from Italy and she really loved that. It
    did have white beans in it and a tomato sauce.

    I don't know, sorry. I would assume they aren't actually a pea, but I'm not
    sure.

    Those would be cannellini beans. You can buy them in cans, or dry. They are
    sometimes called "white kidney beans," but they are a lot more tender than
    the usual red kidney bean.

    Although I love most beans, I am actually not a fan of red kidney beans, and
    I never have them in the house. I prefer to make chili with black beans
    and/or pink beans. Sounds like Angela, too, might prefer other types of
    beans.

    Yes. I have some canned ones which is what is called for in the chili.

    Oooooh! Red kidney beans are our favorite and they are what I prefer in
    chili. I do like black bean soup but I really don't like black beans for
    other things. My parents like to put them on green salads but I don't like
    them that way.

    Since I don't like chicken, I would not be a good one to judge the recipe.
    I know I would do fine with a white bean only chili but that would be too
    many carbs for Angela.

    I think perhaps the best thing to do would be to get a can of it or maybe a
    small container from Taco Bell just to see if she likes it before I try
    messing with a recipe.

    We are headed to the store as soon as I can get her ready. I am also going
    to buy a can of beanless chili. I tried to do that before and she stopped
    me. She won't stop me now because we have to come up with other options. I
    think she also likes steak. I know she loved it when she was younger. She
    thinks she doesn't like it now but in Mexican restaurants she sometimes
    orders carnitas or beef fajitas and she always likes them. So I will also
    look for a steak type chili with no beans.

    Yes, I know chili is dead easy to make but if I get it in a can I will just
    have a small amount. And if she likes it I can go from there.

    I have a delicioius recipe for a warm white bean "salad" if you want it. It
    is from a Southern French cookbook called The Cuisine of the Sun. I would
    have thought that all of that fiber would be a problem for you though...

    I love red kidney beans. I use them in bean salad, (in a 4 bean mix -
    canned), chilli con carne and nachos.

    Thanks! Oddly enough beans do not bother me. It's just stuff like lettuce,
    broccoli, spinach, stuff like that. Those really get me.

    I always take them with us when we travel. They make for a good snack and
    can be added to things to make a meal.

    Have you thought of adding some of the same seasoning to the beans
    that you add to the chili?

    Well since I use canned beans I don't know how that would work. Anyway she
    has flat out refused to eat chili of any kind. I did find some in a can.
    She grabbed it from me and put it back. It's not worth fighting over.
