Basil seems to burn really easily, but I've had luck in it SPROUTING quicker than most herbs. I use it a lot so it's one I like to keep around.

Parsley and mint grows VERY easily so they're great to start with and have many uses.

Otherwise, just depends on your tastes. Herbs are pretty easy.
