I live in Denver, which is not near any coast, so I always buy frozen
seafood. Most of our stores that have seafood not frozen have just
defrosted some for sale. We do see a lot of salmon labeled as fresh, but
unless you are serving it that night, frozen is still better. Of course,
Whole Foods has a beautiful seafood department, but expensive. We buy the
bagged frozen Cod at the big membership store, and have always been happy
with them. I also often pan fry the fillets, but your are prettier than
mine!
